No-Bake Sugar Free Chocolate Fudge Bites Recipe (low carb, grain free, Paleo, nut free)
- 1 Tbsp coconut oil
- 1/2 Tbsp cocoa powder (ideally organic and fair-trade)
- 1/4 tsp raw honey
- 1 Tbsp coconut flour
- Dash of pink salt, or to taste
- Dash up stevia, or to taste
- 1/4 cup dried shredded coconut
DIRECTIONS
Mix together all ingredients, except for dried shredded coconut, in a bowl until well-blended and there are no lumps.
Separate dried shredded coconut in a separate bowl and set aside.
Divide batter into equal parts, then roll each portion into bite-sized balls between your palms.
Roll each ball in bowl of dried shredded coconut until evenly coated.
Place in container with lid (ideally a glass or Pyrex container).
Can be eaten right away, or chilled in freezer for 10-15 minutes for a firmer consistency.
Store in a sealed container in the refrigerator.
